Cook and then chill rice in the fridge. Add oil to wok. Sweat onions until soft but not brown. Add entire jar of nasi paste to the wok, followed by char siu, bean sprouts and spring onions.
Meanwhile heat oil in a non-stick pan, add garlic and onion, mix and saute till translucent. Add peanuts, tomato puree and soy sauce and mix well. Add salt and ¼ cup water, mix well and cook for 2-3 minutes.

Turn the heat up and fry for 3-4 minutes, getting it a little crispy. Combine rice with the veggies. Drizzle with the soy sauce and maple syrup and mix well. Mix in the scrambled eggs and meat/shrimp/tofu if using. Taste and season with a drizzle of sesame oil, chili flakes, salt and pepper if needed.
